Ingredients

  • 5 large (about 3 pounds) ripe tomatoes
  • 4 cups (cubed, crusts removed) stale bread
  • 3 tablespoons olive oil
  • 3 cloves (minced) garlic
  • 1 cup (loosely packed) fresh basil
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 cup (grated) Parmesan cheese
  • 1 teaspoon balsamic vinegar

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Core and cut the large ripe tomatoes into 1-inch cubes. If desired, remove some of the seeds for less juice in the final dish.

Step 3

In a large mixing bowl, combine the cubed tomatoes, cubed stale bread, olive oil, minced garlic, sugar, salt, and black pepper. Toss everything together until the bread absorbs some of the tomato juices.
