Ingredients

  • 3 medium sweet potatoes
  • 1 pound ground beef
  • 1 medium, diced yellow onion
  • 3 cloves, minced garlic
  • 2 tablespoons olive oil
  • 2 cups milk
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1.5 cups shredded cheddar cheese
  • 0.5 cups, grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a medium-sized casserole dish with a thin layer of olive oil or cooking spray.

Step 2

Peel the sweet potatoes and slice them into thin rounds, about 1/8-inch thick. Set aside.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, and saute until softened and fragrant, about 3 minutes.

Step 4

Add the ground beef to the skillet, and cook until fully browned, breaking it up into crumbles as it cooks. Drain any excess fat, then season the beef with dried thyme, oregano, salt, and black pepper. Remove from heat and set aside.

Step 5

In a medium saucepan, melt the butter over medium heat. Whisk in the flour to create a roux and cook, whisking constantly, for 1-2 minutes until light golden brown.

Step 6

Gradually whisk in the milk, a little at a time, to create a smooth sauce. Continue cooking, stirring often, until the sauce has thickened, about 3-4 minutes.

Step 7

Stir in 1 cup of shredded cheddar cheese until melted and smooth. Adjust seasoning with a pinch of salt and pepper if needed, and remove from heat.

Step 8

Layer the casserole dish starting with a single layer of sweet potato slices. Add a layer of the cooked ground beef mixture, followed by a ladle of cheese sauce. Repeat these layers until all ingredients are used, finishing with a layer of cheese sauce on top.

Step 9

Sprinkle the remaining 1/2 cup of shredded cheddar cheese and the grated Parmesan cheese over the top.

Step 10

Cover the casserole with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the sweet potatoes are tender and the top is golden and bubbling.

Step 11

Remove from the oven and let it sit for 10 minutes before serving. Garnish with fresh herbs if desired, and serve warm!
