Ingredients

  • 4 large Russet potatoes
  • 4 cups Fresh spinach
  • 4 tablespoons Unsalted butter
  • 3 tablespoons All-purpose flour
  • 2.5 cups Whole milk
  • 0.5 cups Heavy cream
  • 2 Garlic cloves, minced
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 0.25 teaspoons Freshly grated nutmeg
  • 1.5 cups Cheddar cheese, shredded
  • 0.5 cups Parmesan cheese, grated
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or cooking spray.

Step 2

Peel the russet potatoes and thinly slice them to about 1/8-inch thickness using a sharp knife or mandoline. Set aside in a bowl of cold water to prevent browning.

Step 3

Heat a large skillet over medium heat. Add 1 tablespoon of olive oil. Once hot, add the fresh spinach and sauté until wilted, about 2-3 minutes. Remove from heat and set aside.

Sprinkle the remaining 0.5 cups of cheddar cheese and all of the Parmesan cheese over the top.

Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes. Then, remove the foil and bake an additional 20 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.
