Ingredients

  • 6 medium Russet potatoes
  • 4 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 3 cups Whole milk
  • 1 cup Heavy cream
  • 1.5 cups Shredded sharp cheddar cheese
  • 0.5 cup Grated Parmesan cheese
  • 1 tablespoon Fresh thyme leaves
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly spray a 9x13-inch baking dish with cooking spray.

Step 2

Peel and thinly slice the potatoes into 1/8-inch rounds. Soak the slices in cold water to prevent them from browning and to remove excess starch. Drain and pat them dry when ready to use.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes to form a roux, stirring constantly.

Step 4

Gradually pour in the milk and heavy cream while whisking to avoid lumps. Cook the mixture, whisking constantly, until it thickens, about 5-7 minutes.

Step 5

Remove the saucepan from heat and stir in the sharp cheddar cheese, Parmesan cheese, thyme, parsley, garlic powder, salt, and black pepper until the cheese is fully melted and the sauce is smooth.

Step 6

Layer one-third of the potato slices in the prepared baking dish, slightly overlapping each slice. Pour about one-third of the cheese sauce evenly over the potatoes. Repeat this process for two more layers, finishing with sauce on top.

Step 7

Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.

Step 8

Remove the foil and continue baking for another 35-40 minutes, or until the potatoes are tender and the top is golden and bubbly.

Step 9

Let the dish cool slightly for 10 minutes before serving. Garnish with additional fresh parsley if desired.
