Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
Peel and thinly slice the potatoes into rounds, about 1/8-inch thick. Use a mandoline slicer for even results if desired.
Remove the core from the cabbage and roughly chop it into bite-sized pieces.
Slice the smoked sausage into 1/4-inch rounds.
Dice the onion and mince the garlic.

After 40 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly and the potatoes are tender when pierced with a fork.
Allow the dish to cool for 5-10 minutes before serving. Garnish with chopped parsley if desired.
