Ingredients

  • 4 medium russet potatoes
  • 1 small head green cabbage
  • 12 ounces smoked sausage
  • 3 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup shredded sharp cheddar cheese
  • 0.5 cup grated Parmesan cheese
  • 1 medium yellow onion
  • 2 garlic cloves
  • 1.5 teaspoons salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon paprika
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 2

Peel and thinly slice the potatoes into rounds, about 1/8-inch thick. Use a mandoline slicer for even results if desired.

Step 3

Remove the core from the cabbage and roughly chop it into bite-sized pieces.

Step 4

Slice the smoked sausage into 1/4-inch rounds.

Step 5

Dice the onion and mince the garlic.

Step 6

Heat olive oil in a large skillet over medium heat. Add the smoked sausage slices and cook for 3-4 minutes on each side until browned. Remove from the skillet and set aside.

Step 7

In the same skillet, add the onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant. Add the chopped cabbage and cook for 5-7 minutes until wilted. Season with 1/2 tsp of salt and 1/4 tsp of black pepper. Remove from heat and set aside.

Step 8

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes until bubbly. Gradually whisk in the milk, ensuring no lumps form. Cook for 4-5 minutes, stirring constantly, until the mixture thickens.

Step 9

Remove the saucepan from heat and stir in the cheddar cheese, Parmesan cheese, 1 tsp of salt, 1/4 tsp of black pepper, and paprika. Mix until the cheese is fully melted and the sauce is smooth.

Step 10

Layer half of the sliced potatoes in the prepared baking dish, slightly overlapping them. Top with half of the cooked cabbage mixture and half of the smoked sausage slices.

Step 11

Pour half of the cheese sauce evenly over the layers. Repeat the process with the remaining potatoes, cabbage, sausage, and cheese sauce.

Step 12

Cover the dish tightly with foil and bake in the preheated oven for 40 minutes.

Step 13

After 40 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly and the potatoes are tender when pierced with a fork.

Step 14

Allow the dish to cool for 5-10 minutes before serving. Garnish with chopped parsley if desired.
