Ingredients

  • 6 medium russet potatoes
  • 2 cups ham
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 3 cups whole milk
  • 2 cups sharp cheddar cheese (shredded)
  • 1 cup Parmesan cheese (grated)
  • 1 small yellow onion
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon paprika (optional, for garnish)
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish with butter or nonstick cooking spray.

Step 2

Peel and thinly slice the russet potatoes into 1/8-inch slices. You can use a mandoline slicer to ensure even thickness. Set aside in a bowl of cold water to prevent browning.

Step 3

Dice the ham into small, bite-sized cubes. Finely dice the yellow onion. Set both aside.

Step 4

In a medium saucepan, melt the butter over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes.

Step 5

Sprinkle the flour over the onions and stir constantly for 1-2 minutes to cook out the raw flour taste.

Step 6

Gradually whisk in the milk, ensuring there are no lumps. Cook for 5-7 minutes, stirring constantly, until the mixture thickens into a smooth sauce.

Step 7

Stir in the shredded cheddar cheese and grated Parmesan cheese until melted and fully combined. Add salt, black pepper, and garlic powder. Remove from heat and set aside.

Step 8

Drain the potatoes and pat them dry with paper towels. Layer one-third of the potatoes evenly in the bottom of the prepared casserole dish.

Step 9

Scatter one-third of the diced ham over the potatoes, then pour one-third of the cheese sauce on top. Spread evenly with a spatula.

Step 10

Repeat the layering process two more times with the remaining potatoes, ham, and cheese sauce.

Step 11

Cover the casserole dish with aluminum foil and bake in the preheated oven for 45 minutes.

Step 12

Remove the foil and bake uncovered for an additional 25-30 minutes, or until the potatoes are tender and the top is golden and bubbly.

Step 13

Let the casserole cool for 10 minutes before serving. Optionally, sprinkle with paprika and chopped parsley for garnish.
