Ingredients

  • 4 pieces boneless pork chops
  • 3 medium sweet potatoes
  • 2 large apples (e.g., Honeycrisp or Fuji)
  • 1 medium yellow onion
  • 2 pieces garlic cloves
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 sprigs fresh thyme (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the sweet potatoes and slice them into 1/4-inch thick rounds. Core and slice the apples into 1/4-inch thick wedges. Slice the onion thinly, and mince the garlic cloves.

Step 3

In a large oven-safe skillet or cast-iron pan, heat 1 tablespoon of olive oil over medium-high heat.

Step 4

Season the pork chops on both sides with salt and pepper. Sear them in the hot skillet for 2-3 minutes per side, or until golden brown. Remove the pork chops from the skillet and set aside.

Step 5

Reduce the heat to medium. Add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter to the skillet. Add the sliced onions and garlic, cooking until softened, about 3 minutes.

Step 6

Sprinkle the brown sugar, cinnamon, and nutmeg over the onions and garlic, stirring to coat. Cook for another 1-2 minutes until the mixture is fragrant.

Step 7

Add the flour to the skillet, stirring it into the onion mixture. Cook for 1 minute, then slowly pour in the chicken broth, whisking to combine and create a smooth sauce.

Step 8

Layer the sweet potatoes and apple slices on top of the sauce in the skillet, slightly overlapping them in concentric circles. Sprinkle lightly with additional salt, if desired.

Step 9

Nestle the seared pork chops back into the skillet on top of the sweet potatoes and apples. Add a small pat of the remaining butter to each pork chop.

Step 10

Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Bake for 25 minutes.

Step 11

After 25 minutes, remove the lid or foil and bake for an additional 10-15 minutes, or until the pork chops are fully cooked and the sweet potatoes are tender.

Step 12

Remove the skillet from the oven and let it rest for 5 minutes. Garnish with fresh thyme sprigs before serving, if desired.
