  • 1 Lemon
  • 2 tablespoons Soy sauce
  • 2 tablespoons Ponzu sauce

  • 0.5 teaspoon Sea salt
  • 1 teaspoon White sesame seeds

Directions

Step 1

Ensure the sea scallops are very fresh and of high quality suitable for raw consumption. Rinse them gently under cold water and pat dry with paper towels.

Step 2

Using a sharp knife, slice each scallop horizontally into approximately 1/4 inch thick slices. Arrange the slices on a chilled plate or a wooden sushi board for a traditional presentation.

Zest the lemon over the scallop slices and then cut the lemon in half. Squeeze the juice of half the lemon over the scallops, ensuring they are evenly coated with the citrus flavor.
