Ingredients

  • 1 teaspoons Honey
  • 2 tablespoons Fresh lime juice
  • 4 cups Baby spinach
  • 2 cups Mixed greens
  • 1 cup Cherry tomatoes, halved
  • 1 pieces Cucumber, thinly sliced
  • 0.5 pieces Red onion, thinly sliced
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Rinse the sea scallops under cold water and pat them dry thoroughly with paper towels. Remove any tough side muscle if present.

Step 2

Season the scallops with salt and black pepper on both sides.

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat. Once the oil is hot, add the scallops in a single layer, making sure not to overcrowd the pan. Sear the scallops for about 2 minutes on each side until they develop a golden crust and are just cooked through. Remove from the pan and set aside.
