Ingredients

  • 2 pounds Russet or Yukon Gold potatoes
  • 4 tablespoons Unsalted butter
  • 4 tablespoons All-purpose flour
  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 2 cloves Garlic, minced
  • 2 cups Cheddar cheese, shredded
  • 0.5 cups Parmesan cheese, grated
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 teaspoon Fresh thyme leaves (optional)
  • 0 N/A Cooking spray or butter, for greasing

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or butter.

Step 2

Peel the potatoes and thinly slice them into 1/8-inch-thick rounds using a knife, mandoline, or food processor. Set aside.

Step 3

In a medium saucepan over medium heat, melt the butter. Add the minced garlic and sauté for 30 seconds until fragrant.

Step 4

Whisk in the flour and cook for 1-2 minutes, stirring constantly, until the mixture turns light golden.

Step 5

Gradually pour in the milk and heavy cream, whisking continuously to avoid lumps. Cook for 4-5 minutes until the sauce thickens.

Step 6

Stir in 1 cup of cheddar cheese, the Parmesan cheese, salt, black pepper, and optional thyme leaves. Stir until the cheese melts and the sauce is smooth.

Step 7

Arrange half of the sliced potatoes in an even layer in the prepared baking dish. Pour half of the cheese sauce over the potatoes, spreading it evenly. Repeat with the remaining potatoes and sauce.

Step 8

Sprinkle the remaining 1 cup of cheddar cheese on top.

Step 9

Cover the dish with aluminum foil and bake in the preheated oven for 50 minutes.

Step 10

Remove the foil and bake uncovered for an additional 20-25 minutes, or until the top is golden and bubbly, and the potatoes are tender when pierced with a fork.

Step 11

Let the scalloped potatoes cool for 10 minutes before serving. Garnish with additional thyme if desired. Enjoy!
