Ingredients

  • 3 tablespoons Butter
  • 2 medium, finely chopped Shallots

  • 1 pound Bay scallops
  • 1 cup Dry white wine
  • 3 cups Fish stock
  • 1 cup Heavy cream
  • 2 tablespoons Tomato paste
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 1 teaspoon Fresh thyme leaves
  • 1 tablespoon Olive oil
  • 2 tablespoons, chopped (for garnish) Fresh parsley

Directions

Step 1

In a large saucepan over medium heat, melt the butter.

Add the finely chopped shallots and minced garlic, and sauté until soft and aromatic, about 3-4 minutes.

Add the bay scallops and cook for 2-3 minutes until they just turn opaque. Remove half of the cooked scallops and set them aside for later.

Pour in the dry white wine and bring it to a simmer. Let it cook for about 2-3 minutes to reduce slightly.

Add the fish stock, heavy cream, tomato paste, paprika, salt, black pepper, and thyme leaves. Stir well to combine.
