Ingredients

  • 1 cup couscous
  • 1.25 cups water
  • 1 tablespoon olive oil
  • 4 stalks scallions
  • 1 whole lemon
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon butter (optional)

Directions

Step 1

In a medium saucepan, bring the water, olive oil, and salt to a boil over medium-high heat.

While the water is heating, finely slice the scallions, separating the white and green parts.

Step 3

Once the water begins to boil, remove the saucepan from the heat and stir in the couscous. Cover the pan with a lid and let it sit for 5 minutes to allow the couscous to absorb the water.

After 5 minutes, uncover the saucepan and fluff the couscous with a fork to separate the grains.

Add the white parts of the scallions to the couscous and gently mix them in.
