  • 2 tablespoons Tomato paste
  • 1 cup, chopped Fresh basil
  • 0.5 cup, chopped Fresh parsley
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Ricotta cheese
  • 1 cup, crumbled Feta cheese
  • 2 cups Shredded mozzarella cheese
  • 2 large Eggs
  • 0.5 cup, grated Parmesan cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.

Stir in the diced eggplant and zucchini. Cook until the vegetables are slightly softened, about 8-10 minutes.
