In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
Stir in the diced eggplant and zucchini. Cook until the vegetables are slightly softened, about 8-10 minutes.
Add the crushed tomatoes, tomato paste, basil, parsley, oregano, salt, and black pepper. Lower the heat and let the sauce simmer for 10-15 minutes, stirring occasionally.
While the sauce simmers, prepare the matzo sheets. Quickly dip each sheet into warm water and set aside on a clean towel to soften slightly.
