  • 8 ounces, cubed Firm tofu
  • 2 cups Coconut milk
  • 1 cup Vegetable stock
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cumin powder
  • 2 bruised Lemongrass stalks
  • 4 Kaffir lime leaves
  • 4 small, finely chopped Shallots
  • 3 cloves, minced Garlic
  • 2 medium, sliced (optional) Red chili
  • 2 tablespoons Cooking oil
  • 1 teaspoon (or to taste) Salt
  • 1 teaspoon Sugar

Directions

Step 1

Prepare the vegetables: slice the carrots, cube the eggplant, and cut the green beans into 2-inch pieces.

Step 2

Heat 2 tablespoons of cooking oil in a skillet over medium heat. Sauté the shallots, garlic, and red chili until aromatic, about 2-3 minutes.

Add the turmeric powder, coriander powder, and cumin powder to the skillet. Stir-fry for another minute to toast the spices.

Transfer the sautéed mixture to the crock pot.
