Wash the baby potatoes thoroughly and cut them into quarters.
Bring a pot of salted water to a boil and parboil the potatoes for 5 minutes. Drain and set aside.
While the potatoes are parboiling, slice the smoked sausage into 1/2-inch rounds and finely chop the onion, garlic, and parsley. Remove the tough core from the Savoy cabbage and slice it into thin strips.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the sausage slices and cook until golden and slightly crispy, about 4 minutes per side. Remove the sausage from the skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of olive oil and the parboiled potatoes. Sauté them on medium-high heat, stirring occasionally, until golden and crispy on the edges, about 8-10 minutes. Remove the potatoes and set aside.
Add 2 tablespoons of butter to the skillet. Once melted, add the chopped onion and garlic. Sauté until the onion becomes translucent and fragrant, about 3-4 minutes.
Stir in the Savoy cabbage, dried thyme, smoked paprika, salt, and black pepper. Cook until the cabbage softens, about 5-7 minutes, stirring occasionally.
Return the sausage and potatoes to the skillet, mixing them with the sautéed cabbage to combine all the flavors. Cook for an additional 2-3 minutes until everything is heated through.
Taste and adjust seasoning if needed. Garnish with freshly chopped parsley before serving.
Serve the Savoy Sautéed Sausage and Potato warm as a main dish or a hearty side.
