Ingredients

  • 6 medium Yukon Gold potatoes
  • 4 tablespoons Unsalted butter
  • 1 cup Heavy cream
  • 2 cloves Garlic
  • 1.5 cups Grated Gruyère cheese
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 teaspoon Fresh thyme leaves
  • 0.5 cup Panko breadcrumbs
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the potatoes and chop them into evenly-sized chunks. Place the potato chunks into a large pot and cover them with cold water.

Step 3

Bring the water to a boil over medium-high heat and add 1 teaspoon of salt. Reduce the heat to a simmer and cook the potatoes for 15-20 minutes, or until they are fork-tender.

Step 4

While the potatoes cook, mince the garlic cloves and gently heat them with the butter in a small saucepan over low heat, allowing the garlic flavor to infuse the butter. Do not let the garlic brown.

Step 5

Warm the heavy cream in the same saucepan or in the microwave and set aside.

Step 6

Once the potatoes are tender, drain them thoroughly and return them to the pot. Mash the potatoes with a potato masher or ricer until smooth.

Step 7

Slowly stir in the warmed garlic butter and heavy cream. Add the salt, black pepper, and thyme, mixing thoroughly to create a creamy potato base.

Step 8

Butter or grease a shallow baking dish and spread the mashed potatoes into an even layer.

Step 9

Sprinkle the grated Gruyère cheese evenly over the top of the potatoes, followed by the panko breadcrumbs.

Step 10

Drizzle the olive oil over the panko breadcrumbs to encourage browning.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and the top is golden brown.

Step 12

Remove from the oven and let rest for 5 minutes before serving. Garnish with additional thyme leaves, if desired.
