Ingredients

  • 1.5 cups long-grain rice
  • 1 pound ground beef or ground turkey
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 3 garlic cloves, minced
  • 14.5 ounces canned diced tomatoes
  • 3 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch. Drain well and set aside.

Step 2

Heat the olive oil in a large skillet or pot over medium heat. Add the onion and bell pepper and saute for about 5 minutes, or until they start to soften.

Step 3

Add the minced garlic to the skillet and cook for another minute until fragrant.

Step 4

Add the ground beef or turkey to the skillet. Cook while breaking it apart with a wooden spoon until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.

Step 5

Stir in the cumin, paprika, salt, and black pepper, ensuring the spices coat the meat evenly.

Step 6

Add the canned diced tomatoes (with juice) and chicken broth. Stir to combine all the ingredients.

Step 7

Gently stir in the rice, making sure it is submerged in the liquid.

Step 8

Bring the mixture to a light boil, then reduce the heat to low. Cover the skillet and let it simmer for 18-20 minutes, or until the rice is tender and has absorbed most of the liquid.

Step 9

Add the frozen peas to the skillet and gently toss them with the rice mixture. Cover and cook for an additional 5 minutes, until the peas are heated through.

Step 10

Remove from heat and let sit, covered, for about 5 minutes.

Step 11

Fluff the rice with a fork and garnish with chopped fresh parsley before serving.
