Ingredients

  • 1 cup steel-cut oats
  • 3 cups water
  • 1 cup vegetable stock
  • 0.5 teaspoons salt
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 cups spinach, fresh
  • 1 cup mushrooms, sliced
  • 0.25 cup parmesan cheese, grated
  • 2 pieces poached egg (optional)
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons red chili flakes (optional)
  • 1 teaspoon soy sauce (optional)

Directions

Step 1

In a medium saucepan, combine the steel-cut oats, water, vegetable stock, and salt. Bring to a boil over medium heat, then reduce the heat to low and simmer for 20 minutes, stirring occasionally, until the oats are tender and creamy.

Step 2

While the oats are cooking, heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Step 3

Add the sliced mushrooms to the skillet and cook for 4-5 minutes until they are browned and tender. Stir in the fresh spinach and cook for another 2-3 minutes until wilted. Remove from heat and set aside.

Step 4

Once the porridge is done cooking, stir in half of the grated parmesan cheese and adjust the seasoning with additional salt or pepper, if needed.

Step 5

To assemble, divide the porridge into serving bowls. Top with the sautéed spinach and mushrooms, the remaining grated parmesan, and a poached egg, if using.

Step 6

Sprinkle with black pepper, red chili flakes, and a splash of soy sauce for added flavor, if desired.

Step 7

Serve warm and enjoy your hearty, savory porridge!
