Ingredients

  • 250 grams all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 100 grams grated cheddar cheese
  • 100 grams diced ham
  • 75 grams chopped spinach
  • 50 grams sun-dried tomatoes, chopped
  • 200 milliliters milk
  • 100 grams plain Greek yogurt
  • 2 large eggs
  • 60 milliliters olive oil

Directions

Step 1

Preheat your oven to 190°C (375°F) and line a 12-cup muffin tin with paper liners or lightly grease the tin with oil.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and pepper until evenly combined.

Step 3

Stir in the grated cheddar cheese, diced ham, chopped spinach, and chopped sun-dried tomatoes. Mix to coat the add-ins with the dry ingredients.

Step 4

In a separate bowl, whisk together the milk, Greek yogurt, eggs, and olive oil until smooth and well combined.

Step 5

Pour the wet ingredient mixture into the dry ingredients. Gently stir with a spatula or wooden spoon until just combined. Avoid overmixing to keep the muffins light and tender.

Step 6

Evenly distribute the batter between the 12 muffin cups, filling each about three-quarters full.

Step 7

Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature as an on-the-go snack or delicious addition to a picnic.
