Ingredients

  • 4 pieces large yellow onions
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 pieces garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 3 tablespoons breadcrumbs
  • 2 tablespoons Parmesan cheese, grated
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 1 cup vegetable or chicken stock

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Peel the onions, leaving the root end intact, and cut off the top quarter of each onion. Trim the ends slightly if necessary to help them sit flat in the baking dish.

Step 3

Using a melon baller or small spoon, hollow out the center of each onion, creating a cavity about 1 inch deep. Reserve the removed onion pieces for the filling.

Finely chop the reserved onion pieces and set them aside.

Step 5

Heat 1 tablespoon of olive oil and 1 tablespoon of unsalted butter in a skillet over medium heat. Add the chopped onion pieces and minced garlic, cooking for 3-5 minutes until softened and fragrant.
