Ingredients

  • 4 large Eggs
  • 250 ml Heavy cream
  • 100 ml Milk
  • 100 g Grated Gruyère cheese
  • 100 g Chopped spinach
  • 1 small Diced shallot
  • 15 g Butter
  • 0.5 tsp Salt
  • 0.25 tsp Ground black pepper
  • 0.25 tsp Ground nutmeg

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease four individual ramekins or a medium-sized baking dish with butter.

Step 2

In a small pan, melt butter over medium heat. Add the diced shallot and sauté until soft and translucent, about 2-3 minutes.

Step 3

Add the chopped spinach to the pan and cook until wilted, about 3-4 minutes. Remove the pan from heat and set aside to cool slightly.

Step 4

In a large mixing bowl, whisk together the eggs, heavy cream, and milk. Add the grated Gruyère cheese, salt, pepper, and nutmeg, mixing well to combine.

Fold the cooked spinach and shallots into the egg mixture, ensuring the ingredients are evenly distributed.

Pour the mixture evenly into the prepared ramekins or the baking dish. Place the ramekins or dish in a large roasting pan, and carefully pour hot water into the roasting pan until it reaches halfway up the sides of the ramekins or dish, creating a water bath.

Bake in the preheated oven for 35-40 minutes, or until the flan is set and a knife inserted into the center comes out clean.

Step 8

Carefully remove the ramekins or dish from the water bath and allow to cool for 5 minutes before serving. Serve warm and enjoy!
