Ingredients

  • 200 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 large Eggs
  • 200 grams Cottage cheese
  • 100 milliliters Milk
  • 60 milliliters Olive oil
  • 100 grams Cheddar cheese, grated
  • 2 tablespoons Chopped fresh parsley
  • 2 tablespoons Chopped fresh chives

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 12-cup muffin tin with paper liners or grease lightly with cooking spray.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper until combined.

Step 3

In a separate bowl, beat the eggs gently, then stir in the cottage cheese, milk, and olive oil until smooth.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients and mix until just combined. Do not overmix; the batter should be slightly lumpy.

Step 5

Fold in the grated cheddar cheese, chopped parsley, and chives gently until evenly distributed throughout the batter.

Step 6

Spoon the batter evenly into the prepared muffin tin, filling each cup about three-quarters full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until the muffins are golden on top and a toothpick inserted into the center comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool completely or enjoy warm.
