  • 30 grams Parmesan cheese (finely grated)
  • 50 grams Walnuts (finely chopped)
  • 1 unit Egg yolk
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Paprika (optional, for extra flavor)
  • 1 unit Egg white (for brushing)
  • 1 teaspoon Flaked sea salt (for garnish)

Directions

Step 1

In a food processor, pulse together the flour, salt, and cold butter until the mixture resembles coarse breadcrumbs.

Step 2

Add the sharp cheddar, Parmesan, ground black pepper, and paprika (if using) to the mixture. Pulse again until fully combined.

Step 3

Add the egg yolk and pulse until the dough just starts to come together. Be careful not to overwork the dough.

Step 4

Transfer the dough to a large bowl and gently fold in the finely chopped walnuts with your hands. Shape the dough into a log approximately 4 cm (1.5 inches) in diameter.
