  • 185 grams All-purpose flour
  • 115 grams Unsalted butter (cold, cubed)

  • 60 milliliters Ice water
  • 100 grams Sharp cheddar cheese (grated)
  • 50 grams Gruyère cheese (grated)
  • 50 grams Cream cheese (softened)
  • 1 Red onion (thinly sliced)
  • 15 milliliters Olive oil
  • 1 teaspoon Fresh thyme leaves
  • 1 Egg (for egg wash)
  • 15 milliliters Milk (for egg wash)
  • 0.5 teaspoon Black pepper
  • 5 grams Optional - Fresh parsley (chopped for garnish)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and salt. Add the cold, cubed butter and use your fingers or a pastry cutter to work it into the flour until it resembles coarse breadcrumbs.

Step 2

Slowly drizzle in the ice water, 1 tablespoon at a time, mixing gently with a fork until the dough comes together. Wrap the dough in plastic wrap, flatten into a disk, and refrigerate for at least 30 minutes.

While the dough chills, heat olive oil in a skillet over medium heat. Add the thinly sliced red onion and cook, stirring often, until caramelized and golden brown, about 15 minutes. Set aside and allow to cool.

In a small bowl, mix the grated cheddar, Gruyère, softened cream cheese, fresh thyme, and black pepper. Set aside.
