Ingredients

  • 1.5 pounds beef, buffalo, moose, or venison (cubed)
  • 0.25 cups all-purpose flour
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 3 tablespoons vegetable oil
  • 1 medium yellow onion (diced)
  • 3 cloves garlic cloves (minced)
  • 3 medium carrots (peeled and chopped)
  • 3 stalks celery stalks (chopped)
  • 3 medium potatoes (peeled and cubed)
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 2 leaves bay leaves
  • 1 teaspoons dried thyme
  • 2 tablespoons parsley (chopped, for garnish)

Directions

Step 1

In a large mixing bowl, combine the flour, salt, and black pepper. Toss the cubed meat in the flour mixture until evenly coated.

Step 2

Heat the vegetable oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Sear the meat in batches until browned on all sides, about 2-3 minutes per side. Remove the meat and set aside.

Step 3

In the same pot, add the diced onion and minced garlic. Sauté until softened and fragrant, about 3-4 minutes.

Step 4

Stir in the tomato paste and cook for 2 minutes to caramelize it slightly.

Step 5

Deglaze the pot by adding 1 cup of beef broth, scraping up any browned bits from the bottom of the pot. Let it simmer for 1-2 minutes.

Step 6

Return the seared meat to the pot, then add the carrots, celery, and potatoes.

Step 7

Pour in the remaining 3 cups of beef broth, ensuring the ingredients are mostly submerged.

Step 8

Add the bay leaves and dried thyme. Stir gently to combine everything.

Step 9

Bring the stew to a boil, then reduce the heat to low. Cover the pot with a lid and let the stew simmer for 90-120 minutes, stirring occasionally.

Step 10

Taste and adjust the seasoning with additional salt and pepper, if needed. Remove and discard the bay leaves before serving.

Step 11

Ladle the stew into bowls, garnish with freshly chopped parsley, and serve warm with crusty bread or over mashed potatoes.
