Preheat your grill to medium heat (approximately 375°F). If using an oven, preheat to 375°F.
Prepare the pork sirloin by patting it dry with paper towels. Slice a deep pocket into the side of the pork sirloin without cutting all the way through. Season the outside and inside of the pocket with 1 tsp salt and 0.5 tsp ground black pepper.
In a skillet, heat 1 tbsp olive oil over medium heat. Add the diced green apple and finely chopped onion. Sauté for 3-4 minutes, or until softened.
Add the minced garlic and chopped thyme leaves to the skillet. Sauté for an additional 1-2 minutes, until fragrant.
Stir in 0.5 cup panko breadcrumbs and 1 tbsp butter. Cook for another minute, allowing the breadcrumbs to toast lightly. Remove from heat and let cool slightly.
Stuff the apple mixture into the pocket of the pork sirloin. If necessary, secure the opening with cooking twine to keep the filling in place during cooking.

If cooking on a grill, place the stuffed pork sirloin over indirect heat. Close the lid and cook for 40-50 minutes, turning and basting with BBQ sauce every 10 minutes. If using an oven, place the pork in a baking dish and cook for 40-50 minutes, basting every 10 minutes.
The pork is done when the internal temperature reaches 145°F (measured at the thickest part). Remove from the grill or oven and let rest for 10 minutes before slicing.
Slice the stuffed pork sirloin into thick rounds and serve warm with additional BBQ sauce on the side, if desired.
