  • 1.5 cups shredded cheddar cheese
  • 4 ounces, softened cream cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup panko breadcrumbs
  • 2 tablespoons, melted butter
  • 0.25 cup, grated parmesan cheese

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until softened.

Stir in the minced garlic, red bell pepper, zucchini, and carrot. Cook for another 4-5 minutes, stirring occasionally, until the vegetables are slightly tender.
