Ingredients

  • 2 medium eggplants
  • 2 tbsp olive oil
  • 2 tbsp tahini
  • 2 tbsp lemon juice

  • 0.25 tsp black pepper
  • 2 tbsp fresh parsley

Directions

Step 1

Preheat your oven to 425°F (220°C).

Pierce the skin of the eggplants a few times with a fork to allow steam to escape during roasting.

Place the eggplants on a baking sheet lined with parchment paper and roast in the oven for 35-40 minutes, flipping halfway through, until the skin is charred and the flesh is soft.
