Ingredients

  • 2 sheets puff pastry sheets
  • 1.5 cups cherry tomatoes
  • 4 ounces goat cheese
  • 2 tablespoons parmesan cheese, grated
  • 1 handful fresh basil leaves
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic clove, minced
  • 1 egg egg, beaten
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Unroll the puff pastry sheets onto a clean surface and cut each sheet into six equal rectangles, making a total of 12 pieces.

Step 3

Using a sharp knife, lightly score a border about 1/4 inch (0.5 cm) inside each rectangle, being careful not to cut all the way through the pastry. This will allow the edges to puff up during baking.
