Ingredients

  • 4 whole bell peppers
  • 1 lb ground beef or turkey
  • 1 cup cooked white or brown rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup water

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the tops off the bell peppers and remove the seeds and membranes inside. Rinse the peppers and set them aside.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until softened.

Step 4

Add the minced garlic to the skillet and cook for 1 more minute, stirring frequently.

Step 5

Add the ground beef or turkey to the skillet. Cook while breaking up the meat with a spoon until it's fully browned and no longer pink, about 6-8 minutes.

Step 6

Stir in the cooked rice, diced tomatoes, 1/2 cup of the tomato sauce, Italian seasoning, paprika, salt, and black pepper. Mix well and cook for 3-4 minutes to combine flavors. Remove from heat.

Fill each bell pepper with the meat and rice mixture, packing it tightly.

In a baking dish, stand the stuffed peppers upright. Pour the remaining 1/2 cup of tomato sauce and 1/2 cup of water into the bottom of the dish.

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

Remove the foil and sprinkle the shredded mozzarella cheese on top of each pepper. Return the dish to the oven and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Step 11

Remove the stuffed peppers from the oven and let them rest for 5 minutes before serving.
