Ingredients

  • 1 cup Basmati rice
  • 2 cups Water
  • 3 cups Fresh spinach
  • 2 tablespoons Olive oil
  • 1 medium, finely chopped Onion
  • 2 minced Garlic cloves
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoons Ground turmeric
  • 0.5 teaspoons Ground coriander
  • 1 teaspoon (adjust to taste) Salt
  • 0.25 teaspoons Black pepper
  • 1 cube (optional) Vegetable broth
  • 1 tablespoon Lemon juice
  • 2 tablespoons, chopped (optional garnish) Fresh cilantro

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. Set aside.

Step 2

In a medium saucepan, heat olive oil over medium heat.

Step 3

Once the oil is hot, add the cumin seeds and let them sizzle for a few seconds until fragrant.

Step 4

Add the chopped onion and sauté for 3-4 minutes until softened and translucent.

Stir in the minced garlic and cook for another minute.

Add the ground turmeric, ground coriander, salt, and black pepper. Stir well to coat the onions and garlic with the spices.
