  • 2 cups baby spinach or kale
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion and sauté for 3-4 minutes, until softened and translucent.
