Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground lamb or beef
  • 1 yellow onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 cup beef or chicken stock
  • 1 tablespoon flour
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 pounds russet potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 0.5 cup milk
  • 1 cup cheddar cheese, shredded

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Start by boiling the potatoes: In a large pot, cover the peeled and cubed russet potatoes with water. Add a pinch of salt, bring to a boil, and cook for about 15-20 minutes, or until tender when pierced with a fork.

Step 3

While the potatoes are boiling, prepare the filling: Heat olive oil in a large skillet over medium heat. Add the ground lamb or beef and cook until browned, breaking up the meat with a wooden spoon.

Step 4

Add the diced onion, carrots, celery, and garlic to the skillet with the meat. Cook until the vegetables are softened, about 5-7 minutes.

Step 5

Stir in the tomato paste and flour, making sure to coat the meat and vegetables evenly. Cook for 2 minutes to remove the raw flour taste.

Step 6

Pour in the Worcestershire sauce and beef or chicken stock. Add the dried thyme, frozen peas, salt, and black pepper. Stir well and let it simmer for 5-7 minutes until the mixture thickens slightly. Remove from heat.

Step 7

When the potatoes are done, drain them and return them to the pot. Add the butter and milk. Mash until smooth and creamy. Season with salt to taste.

Step 8

Spread the meat and vegetable mixture evenly in the bottom of a 9x13-inch baking dish.

Step 9

Layer the mashed potatoes on top of the filling, spreading them out evenly and using the back of a spoon to create slight peaks for texture.

Step 10

Sprinkle the shredded cheddar cheese over the top of the mashed potatoes.

Step 11

Bake in the preheated oven for 25-30 minutes, or until the top is golden and the edges are bubbling.

Step 12

Let the Shepherd's Pie cool for 5-10 minutes before serving.
