  • 4 pieces chicken thighs (bone-in, skin-on)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 medium yellow onion (finely chopped)
  • 3 cloves garlic cloves (minced)
  • 1 teaspoon paprika
  • 0.5 teaspoon dried thyme
  • 1 cup chicken broth (low sodium)
  • 0.5 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh parsley (chopped)

Directions

Step 1

Season the chicken thighs on both sides with salt and black pepper.

Step 2

Heat a large skillet over medium-high heat and add olive oil. Once the oil is hot, place the chicken thighs in the skillet skin-side down and cook for 5-7 minutes or until the skin is golden brown and crispy. Flip the chicken and cook for another 5 minutes. Remove the chicken from the skillet and set aside on a plate.

Reduce the heat to medium and add the butter to the same skillet. Once melted, add the chopped onion and sauté for 3-4 minutes until softened and translucent.
