Ingredients

  • 1 cup Long-grain white rice
  • 2 cups Water
  • 3 large Eggs
  • 1 cup Cheddar cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 0.25 cup Green onions, chopped
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 0.5 cup Bread crumbs

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a loaf pan with olive oil.

Step 2

Rinse the rice under cold water until the water runs clear, and then transfer it to a small saucepan.

Step 3

Add the water to the saucepan with the rice and bring to a boil over high heat.

Step 4

Once boiling, reduce the heat to low, cover the saucepan, and let the rice simmer for 15-20 minutes, or until fully cooked and all water is absorbed.

Step 5

While the rice is cooking, beat the eggs in a large mixing bowl.

Step 6

Stir in the cheddar cheese, Parmesan cheese, green onions, garlic powder, onion powder, salt, and black pepper.

Step 7

Once the rice is cooked, remove it from heat and allow it to cool for a few minutes.

Step 8

Add the cooled rice to the egg and cheese mixture, stirring until well combined.

Step 9

Pour the rice mixture into the prepared loaf pan, spreading it evenly.

Step 10

Sprinkle the bread crumbs on top of the mixture in the loaf pan.

Step 11

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the loaf is set and firm to the touch.

Step 12

Remove from the oven and allow the rice loaf to cool in the pan for about 10 minutes before slicing.

Step 13

Serve warm as a side dish or a main course with a side salad.
