Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 0.5 cup sour cream
  • 2 tablespoons green onions, sliced
  • 2 tablespoons butter, melted
  • 0.5 teaspoon garlic powder

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Thoroughly wash the russet potatoes and pat them dry. Prick each potato several times with a fork to allow steam to escape.

Step 3

Rub the potatoes lightly with 1 tablespoon of olive oil, and sprinkle them with 0.5 teaspoon of salt.

Step 4

Place the potatoes directly on the oven rack and bake for 50 minutes to 1 hour, or until the potatoes are tender when pierced with a fork.

Step 5

Remove the potatoes from the oven and let them cool for 10 minutes, until they are safe to handle.

Step 6

Slice each potato lengthwise and carefully scoop out the flesh, leaving about 1/4 inch of potato remaining on the skin. Reserve the scooped-out potato for another use (such as mashed potatoes).

Step 7

Brush the inside and outside of each potato skin with the melted butter mixed with garlic powder.

Step 8

Place the potato skins on a baking sheet, cut side down first, and bake for 5 minutes. Flip the skins over and bake for another 5 minutes until crisp.

Step 9

Remove the potato skins from the oven and sprinkle the inside of each with black pepper.

Step 10

Fill each potato skin with shredded cheddar cheese and crumbled bacon.

Step 11

Return the potato skins to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbling.

Step 12

Transfer the potato skins to a serving platter and top each with a dollop of sour cream and a sprinkle of sliced green onions.

Step 13

Serve immediately and enjoy!
