Ingredients

  • 6 large russet potatoes
  • 1.5 cups heavy cream
  • 1 cup whole milk
  • 3 tablespoons unsalted butter
  • 3 cloves garlic
  • 2 teaspoons fresh thyme
  • 1 cup parmesan cheese
  • 1 cup sharp cheddar cheese
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with 1 tablespoon of butter and set aside.

Step 2

Peel the potatoes and slice them into uniform thin slices, about 1/8-inch thick. This ensures even cooking.

Step 3

In a medium saucepan over medium heat, combine heavy cream, milk, and 2 tablespoons of butter. Gently heat until the butter melts but do not let it boil. Mince the garlic and add it to the saucepan, along with the thyme, salt, black pepper, and paprika. Stir well and remove from heat.

Step 4

Arrange half of the potato slices in an even layer in the greased baking dish. Sprinkle half of the parmesan cheese and half of the cheddar cheese over the potatoes.

Step 5

Pour half of the warm cream mixture evenly over the layered potatoes and cheese.

Step 6

Repeat the layering process with the rest of the potato slices, parmesan, and cheddar cheese. Pour the remaining cream mixture over the top.

Step 7

Cover the dish tightly with aluminum foil and bake for 40 minutes.

Step 8

Remove the foil and continue baking for another 20 minutes, or until the potatoes are tender and the top is golden brown.

Step 9

Allow the potato bake to cool for 5-10 minutes. Garnish with freshly chopped parsley before serving.
