  • 6 Yukon Gold potatoes, quartered
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 3 fresh thyme sprigs
  • 2 fresh rosemary sprigs
  • 2 bay leaves
  • 2 tablespoons all-purpose flour
  • 2 tablespoons water

Directions

Step 1

Season the beef chuck roast evenly with salt and black pepper on all sides.

Step 2

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Sear the roast on all sides until browned, about 3-4 minutes per side. Remove the roast and set aside.

In the same pot, add the diced yellow onion. Cook for 3-4 minutes, stirring occasionally, until softened.

Add the minced garlic to the pot and cook for 1 minute until fragrant.
