Ingredients

  • 1 pound pork tenderloin
  • 3 tablespoons soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 3 garlic cloves
  • 1 inch fresh ginger
  • 2 cups broccoli florets
  • 1 red bell pepper
  • 1 carrot
  • 3 scallions
  • 2 tablespoons hoisin sauce
  • 1 teaspoon sesame oil
  • 4 cups white or brown rice

Directions

Step 1

Slice the pork tenderloin into thin strips. In a large bowl, mix 2 tablespoons of soy sauce with 2 tablespoons of cornstarch to make a marinade. Add the pork strips to the marinade, toss to coat, and let it sit for at least 15 minutes.

Step 2

While the pork marinates, prepare the vegetables. Mince the garlic cloves and finely chop the fresh ginger. Cut the red bell pepper into thin strips. Slice the carrot diagonally. Cut the scallions into 2-inch pieces.

Step 3

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the marinated pork strips in a single layer. Stir-fry for about 3-4 minutes until browned and just cooked through. Remove the pork from the pan and set aside.

Step 4

In the same pan, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.

Step 5

Add the broccoli florets, red bell pepper, carrot slices, and half of the scallion pieces to the pan. Stir-fry the vegetables for 3-4 minutes until they are crisp-tender.

Step 6

Return the pork to the pan. Add in the remaining tablespoon of soy sauce, the hoisin sauce, and sesame oil. Stir everything together and cook for another 2 minutes to heat through and coat everything in the sauce.

Step 7
