Peel and thinly slice the potatoes into rounds. Slice the onion into thin rings. Mince the garlic.
Season both sides of the pork chops with salt, black pepper, and dried thyme.
Heat a large skillet over medium-high heat with the olive oil. Sear the pork chops for 2-3 minutes on each side until golden brown. Remove and set aside.
