Ingredients

  • 16 oz penne pasta
  • 2 tbsp olive oil
  • 1 lb Italian sausage (removed from casing)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic cloves, minced
  • 28 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp red pepper flakes
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with a thin coat of olive oil or cooking spray and set aside.

Step 2

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the Italian sausage and cook, breaking it up with a wooden spoon, until browned and fully cooked, about 6-8 minutes. Remove excess grease if necessary.

Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbling with golden spots.
