  • 1.5 cups Pecans
  • 1 medium, finely chopped Onion
  • 3 cloves, minced Garlic

  • 1 cup, finely chopped Button mushrooms
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried sage
  • 1.5 tablespoons Soy sauce
  • 1 cup Rolled oats
  • 0.5 cup Whole wheat breadcrumbs
  • 0.5 cup Vegetable broth
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.

Step 2

Place the pecans in a food processor and pulse until finely chopped, resembling coarse crumbs. Set aside.

Step 3

In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-5 minutes.
