  • 1 tablespoon Unsalted butter
  • 1 whole Large yellow onion
  • 1 medium Russet potato
  • 2 cloves Garlic cloves, minced
  • 8 whole Large eggs
  • 0.25 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.33 cup Blue cheese, crumbled
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Peel and thinly slice the onion. Peel the potato, then dice it into small 1/2-inch cubes.

Step 3

Heat 1 tablespoon of olive oil and the butter in a 10-inch oven-safe skillet over medium heat. Add the sliced onions and cook for 8-10 minutes, stirring occasionally, until they are soft and starting to caramelize.
