Ingredients

  • 500 grams All-purpose flour
  • 1 tablespoon Granulated sugar
  • 1.5 teaspoons Salt
  • 2.25 teaspoons Active dry yeast
  • 250 milliliters Warm water
  • 100 milliliters Whole milk
  • 3 tablespoons Olive oil
  • 1 large Yellow onion
  • 2 tablespoons Unsalted butter
  • 0.5 teaspoons Dried thyme
  • 0.5 teaspoons Garlic powder
  • 1 large Egg

Directions

Step 1

In a small mixing bowl, combine the warm water and sugar, stirring until dissolved. Sprinkle the active dry yeast on top, let it sit for about 5-10 minutes until foamy.

Step 2

While the yeast activates, thinly slice the onion. Heat a skillet over medium heat, add the butter, and sauté the onion with a pinch of salt until golden and caramelized, about 8-10 minutes. Set aside to cool.

Step 3

In a large mixing bowl, whisk together the all-purpose flour and salt.

Step 4

In a small saucepan, warm the milk until lukewarm (not boiling). Add the olive oil, dried thyme, and garlic powder to the milk.

Step 5

Make a well in the center of the dry ingredients. Pour in the yeast mixture, the warm milk mixture, and the egg. Mix until combined. Fold in the cooled caramelized onions.

Step 6

Knead the dough on a lightly floured surface for about 8-10 minutes until it is smooth and supple, or use a stand mixer with a dough hook for 5-6 minutes. If the dough is too sticky, add a tablespoon of flour at a time as needed.

Step 7

Shape the dough into a ball and place it in a lightly oiled bowl. Cover with a damp towel or plastic wrap and let it rise in a warm spot for about 1 hour, or until doubled in size.

Step 8

Punch down the dough and transfer it to a clean surface. Shape it into a loaf, or divide it into rolls, if preferred. Place the shaped dough onto a greased baking pan or loaf tin.

Step 9

Cover the dough and let it rise again for about 30 minutes, or until slightly puffed.

Step 10

Preheat the oven to 375°F (190°C). Brush the top of the dough with olive oil or an egg wash for a glossy finish.

Step 11

Bake in the preheated oven for 30-35 minutes, or until the bread sounds hollow when tapped and the top is golden brown.

Step 12

Let the bread cool on a wire rack for at least 15 minutes before slicing and serving.
