  • 250 grams all-purpose flour
  • 125 grams unsalted butter
  • 4 tablespoons cold water
  • 1 teaspoon salt
  • 200 grams ground beef
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 0.5 teaspoon ground black pepper
  • 1 egg, beaten
  • 0.5 teaspoon thyme, dried
  • 1 tablespoon milk

Directions

Step 1

To prepare the pastry, sift the flour and salt into a large bowl.

Step 2

Dice the butter into small cubes and rub it into the flour with your fingertips until the mixture resembles coarse breadcrumbs.

Add the cold water a tablespoon at a time, mixing with a fork until the dough starts to come together. Wrap the dough in plastic wrap and refrigerate for at least 20 minutes.

While the dough chills, heat the olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
