  • 2 cups basmati rice
  • 1 pound boneless meat (chicken, beef, or lamb)
  • 1 large onion

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon ground turmeric
  • 1 cinnamon stick
  • 1 bay leaf
  • 4 cups chicken or beef broth
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in warm water for 15 minutes, then drain well.

Step 2

Cut the meat into bite-sized cubes. Finely chop the onion and mince the garlic cloves.

Step 3

In a large pot or Dutch oven, heat the olive oil and butter over medium heat. Add the chopped onion and cook until it is soft and translucent, about 5 minutes.

Add the minced garlic, ground cumin, ground coriander, ground turmeric, cinnamon stick, and bay leaf. Cook for an additional 2 minutes until fragrant.
