Ingredients

  • 2 pounds Butternut squash
  • 4 tablespoons Butter
  • 0.5 cup Heavy cream

  • 1 teaspoon Fresh thyme
  • 2 whole Garlic cloves
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Peel the butternut squash with a vegetable peeler. Cut in half lengthwise and scoop out the seeds with a spoon.
