Ingredients

  • 250 grams Chicken liver
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 tablespoon Butter
  • 1 Large onion, sliced
  • 1 tablespoon Balsamic vinegar
  • 2 cloves Garlic, minced
  • 4 tablespoons Mayonnaise
  • 4 Ciabatta rolls
  • 1 cup Arugula leaves

Directions

Step 1

Start by cleaning the chicken livers. Remove any connective tissues and fat, rinse under cold water, and pat dry with a paper towel.

Season the livers with salt and pepper.

Step 3

In a large skillet, heat 1 tablespoon of olive oil and the butter over medium heat.

Step 4

Add the sliced onions to the pan. Cook on medium-low heat for about 10-15 minutes, stirring occasionally until the onions become golden brown and caramelized. Add the balsamic vinegar to deglaze the pan, stirring for another minute. Remove from the pan and set aside.

Using the same pan, add the remaining 1 tablespoon of olive oil over medium-high heat. Add the chicken livers and cook for about 3-4 minutes on each side until browned and cooked through.
