  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups kale or spinach, chopped (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables begin to soften and the onions are translucent.

Stir in the minced garlic and cook for an additional minute until fragrant.
