Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 0.5 cup onion, finely chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 teaspoon lemon zest

Directions

Step 1

Rinse the rice under cold running water until the water runs clear to remove excess starch. Set aside to drain.

Step 2

In a medium-sized saucepan, heat the butter and olive oil over medium heat until the butter is fully melted.

Step 3

Add the minced garlic and chopped onion to the saucepan. Sauté for 2-3 minutes until the onion is translucent and fragrant.

Step 4

Stir in the rinsed and drained rice, ensuring that it is fully coated with the butter and oil mixture. Cook for 1-2 minutes to lightly toast the rice.

Step 5

Add the water, salt, and black pepper, and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer for 15 minutes. Do not lift the lid during cooking.

Step 6

After 15 minutes, remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes.

Step 7

Remove the lid and fluff the rice gently with a fork. Stir in the fresh parsley, thyme, rosemary, and lemon zest.

Step 8

Taste and adjust seasoning if needed. Serve warm and enjoy!
